As Craig says you can still change how the columns are "Arrange(d by)" in the "View" menu, in the Finder, or from the icon you show in your screen shot, 2 icons over to the right in the Toolbar is the "Arrange by" button. Click on that and choose "Name" instead of "Date Added".

If you want, you can "right click" on your Finder toolbar (gray area) and choose to show "Icon and Text" that will give you the names of the icons in your toolbar. Arrange will appear, just click on that.

Craig, Apple now uses "Arrange by" not "Sort by" except in the Finder like you said, seems to be an inconsistency in UI naming.
